Pasta with Grape/Cherry Tomatoes & Basil

1/4 cup olive oil
4 large garlic cloves, diced
1 pint grape/cherry tomatoes, sliced in half
1/4 tsp red pepper flakes
6 large basil leaves, chopped
1/3 cup freshly grated Parmigiano-Regiano cheese
1 lb. thin spaghettini pasta
salt & pepper to taste

In a large frying/saute' pan, heat the olive oil over medium heat and saute' the garlic until golden brown....do not burn.
Add the slice tomatoes and the red pepper flakes and cook for about 5 - 10 minutes.
In a large pot of boiling, salted water, cook the pasta until "al dente". Strain and transfer to the pan with the tomato mixture. Toss until completely coated.
Add the basil and the cheese to pasta/tomato mixture. Just cook for a few more minutes until the basil is wilted and the cheese is somewhat melted/soft.
Salt and pepper to taste.
Serve with extra grated cheese on the side.

ReplyDeleteThis recipe sounds very tasty. It is similar to one I made the other evening. But I didn't cook the "sauce". I simply cut up the tomatoes, minced garlic, sliced basil, added olive oil, salt and freshly ground pepper in a bowl and then added the hot cooked pasta on top and tossed.
I may try your recipe tomorrow.

ReplyDeleteYes, they are VERY similar. Since I don't cook the 'sauce' very long, it probably is the same as yours, only warmed up a little.
I am SURE it is wonderful as a cold pasta salad too. You can't go wrong with the ingredients. In fact, I usually just throw things in after the initial measurements to whatever level I prefer. This is just a starting point.
I'm sure that veggies are always very fresh in Hawaii, huh? I'm ready to plow up my garden beds for the year as the nights are beginning to get chilly and things will soon start to shrivel up.
I also just thought of something! I need to send you that Opakapaka recipe I told you about. Since it's after 10:00 PM here, it would be better if I make a note and send this to you tomorrow!

The local produce is fresh Roz. Very expensive though. I tried growing the tomatoes at home non gave fruit. Oh well...
